This little baby has been a big HUGE hit in my "in-person" Detox Cooking Workshops. Why? Because it is so simple....so easy...and it is so delish I can barely stop myself from devouring the whole thing alone....(which wouldn't be so bad because...welll...it's detox and aside from the explosive layering of flavors - there's not much "food" there).
This dish translates well into social situations - having people over for dinner, bringing an "appie" to a gathering, cooking lunch for a friend who's on a "diet" (YUCK!!!), providing an impromptu snack to have with a glass of wine when your in-law decides to pop in and see if you've cleaned your house or spent money on something frivolous...you know what I mean.
Anyhow, I know you want the recipe - so here it goes! Please note that I include a secret or two to success when preparing these "delishes" - posted at the bottom of the recipe!
1 (large) Brown Rice Flour Tortilla
Coconut Oil (not much - just enough to cook shallots, pears and brown the otort)
1 ripe pear
10 fresh sage leaves
½ log (4oz) goat cheese (herbed is great!)
1 tsp pure maple syrup
Mince shallot and caramelize in coconut oil in hot skillet – set aside
Fry sage leaves in coconut oil until crispy – set aside
Slice thinly one pear (with skin on) – quickly sear (one minute total) in hot skillet coated with coconut oil - drizzling 1 teaspoon maple syrup or honey all over slices.
I large separate skillet heat coconut oil and sprinkle sea salt. Spread warmed goat cheese on rice flour tortilla and place in skillet. Allow tort to cook until golden brown – place pear slices, and sprinkle shallots, place sage. Remove from skillet and slice with pizza cutter!
It's more amazing when you caramelize your shallot and sear your pear slices in a cast iron skillet! My favorite Rice Flour Tortillas are from Food for Life
